<p><strong>Preparation</strong></p>
<p>In a large bowl combine chicken quarters, garlic, oregano, pepper and coarse salt to taste, vinegar, olive oil, prunes, olives, capers and juice, and bay leaves. Cover and let marinate, refrigerated, overnight.</p>
<p>Arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine around them.</p>
<p>Bake for 50 minutes to 1 hour, basting frequently with pan juices. Chicken is done when thigh pieces, pricked with a fork at their thickest, yield clear yellow (rather than pink) juice.</p>

<p>Slice the chicken thighs into 3 pieces each, drizzle with olive oil and season well with salt and pepper.</p>
<p>Heat some olive oil in a large frying pan, then fry the chicken for 10 minutes. Keep tossing it around to make sure it’s evenly cooked.</p>
<p>Drain the potatoes and then crush them down a little. You don’t want them to be mashed, just a bit bashed around!</p>
<p>Throw the oregano into the frying pan , then add a tablespoon of olive oil, a splash of the red wine vinegar and a bit more seasoning.</p>
<p>Now add the potatoes into the mix too along with the tomatoes. Mix it all together so everything’s coated in lovely flavor.</p>
<p>Spread all this out into a roasting tray – it doesn’t have to be a big one, better if everything is in one layer rather than heaped into a pile.</p>

<p>Cut 12 thin pats of butter, and lay them in the bottom of a pan (the pan should be big enough for your chicken breasts), so you have four columns of three pats of butter.</p>
<p>Depending on the type of box of Ritz you&#8217;ve bought, you&#8217;ve either got one bag filled with crackers, or three sleeves. Regardless, what you want to do is crumble them up. I find it&#8217;s easier (and less messy) if you do this in the bag or the sleeve(s). If it&#8217;s a bag, just grumble the bag between your thumbs and fingers, shaking the bag around so as to break up a majority of the crackers (but somewhat gently so you don&#8217;t pop the bag and have Ritz crumbs all over the place). If it&#8217;s sleeves, push in from both ends with your palms, gently, and grumbling with your fingers and thumbs.</p>
<p>Pour a layer of your Ritz crumbs over the bottom of the pan with the butter pats. Now, sprinkle some black pepper on your chicken breasts, and lay them in the pan over where your butter pats were. Cut another 12 pats of butter, and place three on each breast of chicken. Now pour your Ritz crumbs over the top and sides of the breasts, being sure to try and get them all good and covered. Cut up the rest of your butter, and put another three pats on the top of each Ritz covered breast, and toss the rest of the pats between the breasts and around the edges of the pan.</p>
<p>Since you&#8217;ll want to serve Crispy Potatoes with this, put the potatoes in the oven first, and after those have cooked for a half hour, put the chicken in the oven.</p>
<p>Cook for about an hour to an hour and fifteen minutes.</td>

<p><strong>Safety note.</strong> Scotch Bonnet and Habanero chile peppers are very hot and can cause extreme pain if they come in contact with your eyes. We strongly recommend wearing protective gloves while handling the chilies and the jerk paste.</div>

<h3>Method</h3>
<p><strong>1</strong> Put vinegar, rum, hot peppers, onion, green onion tops, thyme, olive oil, salt, pepper, allspice, cinnamon, nutmeg, ginger, and molasses into a blender. Pulse until mostly smooth.</p>
<p><strong>2</strong> Place chicken in a large freezer bag, or in a large roasting pan or baking dish. Pour lime juice over the chicken and coat well. Add the jerk paste to the chicken pieces and coat well. Seal the bag or cover the chicken in the pan with plastic wrap. Refrigerate overnight.</p>
<p><strong>3</strong> When you are ready to cook the chicken, remove chicken from the marinade bag or pan. Put the remaining marinade into a small saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Set aside to use as a basting sauce for the chicken. <em>If you want you can reserve a little of the marinade (once boiled for 10 minutes since it has been in contact with raw chicken) to serve with the chicken or to mix with some ketchup and a dash of soy sauce for a serving sauce.</em></p>
<p><strong>4a</strong> <em>Grilling Method</em><br />
Preheat grill to medium high. Sprinkle chicken halves with salt and pepper. Place chicken halves, skin side down on the grill grates. Cover. Cook for approximately one hour, keeping the internal grill temperature between 350°F and 400°F, turning the chickens occasionally and basting with marinade, until the chicken halves are cooked through. The chicken is done when the juices run clear (not pink) when a knife tip is inserted into both the chicken breast and thigh, about 165-170°F for the breast and 180-185°F for the thigh. Transfer chicken to platter. Tent loosely with foil to keep warm and let stand 15 minutes.</p>
<p><strong>4b</strong> <em>Oven Method</em><br />
Preheat oven to 350°F. Place chicken halves in a rimmed baking pan, skin side up. Roast until chicken halves are cooked through, about 50-60 minutes. The chicken is done when the juices run clear (not pink) when a knife tip is inserted into both the chicken breast and thigh, about 165-170°F for the breast and 180-185°F for the thigh. Transfer chicken to platter. Tent loosely with foil to keep warm and let stand 15 minutes.</p>
<p>Cut chicken into pieces. Serve with black beans and rice.</p>

<p>These quick chicken recipes are easy, quick and delicious. Just check these out and I&#8217;m sure you&#8217;ll be amazingly surprised.</p>
<p>So put your hat on and get ready for some easy quick chicken recipes:</p>
<p>&gt;&gt; <strong>Quick and Tasty Chicken Soup</strong></p>
<p>1 1/2 c Chicken; cooked diced.</p>
<p>1/4 c Celery; diced fine</p>
<p>1 1/2 c Chicken broth;</p>
<p>1/2 ts Thyme;</p>
<p>1 c Water</p>
<p>1/2 tb Arrowroot;</p>
<p>2 tb Onion; chopped fine</p>
<p>1 tb Water;</p>
<p>Simmer first seven ingredients for about 10 minutes. Make paste of<br />
arrowroot and 1 tb water, add to soup. Cook until clear and smooth.</p>
<p>Here&#8217;s another quick chicken recipe that I had the pleasure to learn from one of my best friend. This is delicious.</p>
<p>&gt;&gt; <strong>Quick Chicken Piccata</strong></p>
<p>4 Boneless chicken breast halves, skinned Salt and freshly ground pepper</p>
<p>2 tb Butter</p>
<p>1 t Vegetable oil</p>
<p>1/2 c Chicken broth</p>
<p>1/4 c Vermouth</p>
<p>2 tb Fresh lemon juice</p>
<p>1 tb Capers, drained, rinsed Lemon slices</p>
<p>Pat chicken dry. Season with salt and pepper. Melt butter with oil in<br />
heavy large skillet over medium-high heat. Add chicken and cook until<br />
springy to touch, 4 minutes per side. Remove from skillet; keep warm.</p>
<p>Increase heat to high. Stir broth and vermouth into skillet. Boil until reduced by half, scraping up any browned bits. Remove from heat. Mix in lemon juice and capers. Place chicken on plates and pour sauce over. Garnish chicken with lemon slices.</p>
<p>Simmer first seven ingredients for about 10 minutes. Make paste of<br />
arrowroot and 1 tb water, add to soup. Cook until clear and smooth.</p>
<p>4 servings.</p>
