Coconut and Peanut Chicken

Ingredients

1 Chicken – (cut into 10 pieces)
1 Large Onion finely sliced
1 tsp Garlic (crushed)
1/2 tsp Ginger(crushed)
1 tsp Salt or as required
3-4 Green chillies (crushed)
3-4 tbsp Coriander leaves (chopped)
1 tsp Cumin seeds(Jeerakam)
2 cups Coconut milk
4 Garlic pods (sliced)
3 tbsp Peanuts (slightly crushed)
1/2 cup Oil

1) Heat 1/4 cup of oil in a pan.

2) Add onions and saute, till they turn golden brown.

3) Add cumin seeds and fry for a while.

4) Add chicken, ginger, garlic, salt and green chillies and fry for 1 – 2 mins.

5) Lower the heat and simmer, till the chicken becomes tender.

6) Increase heat and cook, till the water is completely dried up.

7) Add coconut milk and coriander leaves.

8) Bring it to a boil.

9) Fry garlic slices and peanuts in remaining oil for a minute or two and pour into chicken mixture.

10) Cook, till the sauce thickens slightly.

Serve hot with basmati rice.
