Smothered Cajun Chicken Recipes
Ingredients
Boneless chicken breasts
1 large onion, sliced in rings
1 bell pepper, sliced
Cajun seasoning flour
salt & pepper
Preparation
Sprinkle cajun seasoning generously on chicken. Mix flour with salt, pepper & more Cajun seasoning, if you wish. Dip chicken breasts in mixture of milk and egg and then dip the chicken into the flour mixture, making a thick coating. Fry chicken until golden brown on both sides. Remove and set aside. Saute onions and bell pepper in drippings until light brown. Drain most of oil, pushing onions and peppers to the side. Put chicken back in pan and top with onions & peppers. Add water to pan, not quite covering chicken. Cover pan and simmer for 30-40 min, adding water if necessary. Check gravy and add more seasoning to taste. May add a dash of Tabasco. Serve over rice.
