Tuscan Chicken
Ingredients
¼ cup butter
1 pound boneless skinless chicken breast, cut into cubes
2 tbsp brandy
8 oz cherry tomatoes
8 oz mushrooms, sliced
1 cup dry white wine or chicken broth
Freshly ground pepper
Dried rosemary, crushed
Directions
| 1. In a large skillet melt butter over medium heat. Add chicken; cook and stir for 3 minutes. | |
| 2. Add brandy, tomatoes, and mushrooms. Cook and stir for 3 minutes. Add wine or broth and rosemary. Season with pepper. | |
| 3. Bring to a boil; reduce heat, simmer, uncovered, until liquid is reduced and chicken is tender. Serve with steamed zucchini sticks and garnish with fresh rosemary. | |
